Youre mixing up tested theories with mathematical theories. Both are equally valid, it's just that mathematical theories (like micro gravity) can't be tested because we don't have the technology to do so.
Evolution can be tested, has been tested, and is fact. Just as the theory of general relativity (which includes gravity) has been tested and is fact. Scientific theories are fact. Period. E.g. "This discovery confirms a new class of planetary systems that could harbor life," William Borucki, the principal investigator of the Kepler telescope said in a statement. "Given that most stars in our galaxy are part of a binary system, this means the opportunities for life are much broader than if planets form only around single stars.
