Well how do host companies do a virtual setup on one shared IP?

You must be able to host many websites off of one IP ... Without messing
up the logs and making sure they get indexed by search engines
correctly.

We run HELM on the server so I've no idea how it's all setup in IIS, the
server guys take care of that config ... I stay out of that kitchen. ;)
