Here is some info (text files) that maybe someone can use to get a better
picture...

I followed a help file on adobe.com to get the thread dump and stack trace:
http://www.adobe.com/cfusion/knowledgebase/index.cfm?id=tn_18339

Thread dump:
http://pagelogix.com/temp/threaddump.txt
pulled from ssh window

Stack trace:
http://pagelogix.com/temp/stacktrace.txt
taken from cfserver.log

CFSTAT output updated once p/sec:
http://pagelogix.com/temp/cfstat.txt
pulled from ssh window

After doing the above, I tried to make sense of the stack trace using the
adobe.com info, but had no idea what I was looking at...

As you can see from the cfstat output, server runs fine with under 1 page
p/sec, then suddenly something hangs and all further cfm template requests on
any site pile up in REQS RUN'G until it breaks loose and everything is executed
the following second. There's no exact time pattern as to when it will happen
or for how long, but it's doing it every few minutes now and lasting up to 25
seconds.
