I think probably as far as Cavaliers are concerned it is a historical thing
more than anything. The group of ladies who started the breed off again
would have considered it unladylike to kneel VBG! If you look at the old
photographs even at indoor shows you will see that some  wore hats! Also of
course it is difficult for a dog that is stacked to show the happy extrovert
nature by wagging its tail
There are some judges will penalise a dog for standing like a statue even
though it is being attentive to its handler they like to see the tail
wagging.
Of course in the UK a handler with a Cavalier in the group is not alone in
standing , the majority are shown free - exceptions are Bichons Pekes
Italian Greyhounds and maybe a couple of others who I can't think of at the
moment.
I had quite a "discussion" with a trainer when I was over in the US a couple
of years ago because she was advocating that the owner of a Cavalier should
kneel when showing her dog. I was informed that this was the way things were
done in the US if the person wished to be successful at group level. She
said that being the only one standing made her conspicuous - I personally
thought that was an advantage! VBG
