Terrie, you can get sable by breeding a dog with sable genes to one with tan points genes so there doesn't have to be sable on both sides for a visual sable coat to appear in a litter. Sable is carried at the same gene locus as tan points and tan points gene is recessive to sable genes. A dog with one sable gene and one tan points gene will show sable coloring.
She could have gotten the chocolate from Papillons too, but I think it more likely that she got that from Poodles, hence the curly coat. In fact, the pups look like they have some Poodle from the head shapes and the look of the eyes.
