The label on the partition won't disappear even if you fdisk it when the recreated partition is the exact same as it was before. In other words, if you are just deleting the partition and recreating it the same as it was you will need to relabel it manually.
Also, I'm not sure about the earlier releases of Gentoo but I use 1.4 rc1 which I would recommend unless you want to recompile your whole system when 1.4 is officially released :) Anyways, 1.4 rc1 comes in i386, i486, i586 (plain i586, K6, K6/2, K6/3, and pentium mmx), i686 (plain i686, Athlon, Athlon tbird, Athlon XP, pentium 2, pentium 3, and pentium 4) for all the stages. So unless you really have a strange combination of hardware they have a stage 1, 2, or 3 tarball that you can use on pretty much any Intel or AMD processor. This is of course for 1.4 rc1, they don't have this for 1.2 Hope this helps.
