My thoughts on this.... I haven't really seen a need to create other lists yet. Yes, we cover a large range of topics. But, These topics are typically to help resolve a problem a member is having, or discuss something pertinent to the group or Linux in general. These topics come up, get discussed, and then either get resolved, get taken off list, or quietly die.
When topics start becoming VERY common then it would probably be a good idea to create a separate list for that particular topic. I'm all for good organization, but I see too many times where organizing something for the sake of doing something proactive just doesn't lead to the expected results (i.e. in this case the expected results would be people subscribing to the lists we create). My personal thought is to let the List evolve itself - let the List (not the member's of the list) show us what topics need a separate list.....
