Something like that has always appealed to me as well. Two separate, and specific tracks. If the person is looking for a server solution, Fedora, RHEL, SuSE, and plain ol' Debian are also huge ones to consider. Personally, I wouldn't have much of a problem being a *buntu-centric COSSfest. For servers, offer Ubuntu Server, and for desktops, offer the different K/X/Ubuntu variants.
