Presumably on the hardware side I will need a 10base2-10baseT converter,
and that shouldn't be too difficult to find, but my experience with
versions of Mac OS previous to 9 are very limited. I know the latest
version I can run on the SE/30 is System 7.5.5 - does this support
TCP/IP?

I'm pretty sure it does, as do earlier versions. If System 6 machines can be networked with newer Macs, I'm assuming you shouldn't have too many problems. Jagshouse, Gamba's Site and System 6 Heaven will probably have all the info you need.

I've fished around the Apple download site and found a full install of
7.5.3 - but it's designed to be burnt onto a CD. Can I still get CD-ROM
drives for the SE/30? eBay would seem a good bet - what should I search
for?

Yeah, just get a SCSI one. I think it needs to be SCSI 1 compatible (http://home24.inet.tele.dk/ccadams/se/hard_disk.html).

I also found a version of 7.0 in floppy format, but my G5 doesn't have a
floppy drive. Buying a USB floppy drive would seem to be one solution for
that, but I was also wondering whether it's possible to boot the SE/30
over the network and do a clean install that way, possibly from my 7.5.3
download?
Not sure about installing over a network, but if you transfer all the disk images to your SE/30 over the network, and then double click on "01 of 19" then after a few minutes an icon for the CD will appear on your desktop. Double click that and you're away. The only problem I could forsee is if you don't have enough hard disk space for the OS install *and* the disk image files.
