I never add water to mine.  If it gets too greasy I carefully drain the pan
by the sink.  I do press down a little with a spatula to make sure they stay
flat.  George got on me once a while back because my burgers were not
staying flat so i try to be pretty careful about that.
I have a cover on the panb so the frying will not splash at me.  I go for
maybe 5 minutes on the first side, then turn off the pan and let it fry
more.  When it quiets down, I slide the pan off the heat, open it, flip it,
and go a few minutes more.  I have the heat pretty high with the pan
covered.  I don't get burned because I wait until it calms down before
opening the cover.
I also like to put the buns in under the cover on top of the burgers so the
buns can get warm and get the flavor into them.
Also if I assemble the burgers when they are pretty darn warm, if I have a
slice of cheese it will start to  melt.  Yum!
No out burger tastes like a good fried homemade one.
