the plates come out and they have a smooth side and a side with grids. You put it in wich ever way you want and then close the lid when ready to cook. I don't think they would turn out on the grill that makes the marks, but I do think they do have one that has the removable plates, and I think one is a griddle. Then you could with that one, but I don't know how that works.
