I have a George F. removal grill plates, but I wasn't aware that you could
turn them over for a smooth surface, does this apply to all models with
removal plates?

the plates come out and they have a smooth side and a side with grids. You
put it in wich ever way you want and then close the lid when ready to
cook.
I've seen one but it didn't have a timer.

I don't think they would turn out on the grill that makes the marks, but I
do think they do have one that has the removable plates, and I think one
is
a griddle. Then you could with that one, but I don't know how that works.

I use a spatula, once I feel that the underside is seeming to be cooked,
put
it underneath & turn it over.
We use a grittle here, so we have a larger surface to work on.
