I have an electric stove so I heat my cast iron skillet (think of clock face where totally off is 12 straight up and down) So I turn to where the 6 or 7 would be... 180 degrees from where that 12 was... Once oil or butter is hot and I drop 1/3 cup of the batter I would say only about 2-3 minutes before I flip and then maybe another 1-2 minutes on the other side. That timing should get you in the ballpark. Now once my pan is heated and cast iron once hot stays hot I will turn down my temperature... again think of that clock face thus turning down means more towards where the 7 or 8 would be. Now in case your controls are set up a bit differently... as I move my knob from totally off 12 position I move it clockwise (to the right) to get to that 6 position and keep moving it clockwise around towards 7-8-9-10-11 and then back to off. Hope this helps some. I know it sounds weird but I really was a terrible pancake maker like I mentioned and had even tried packaged mixes, scratch recipes, and one pan oven baked pancakes but still turned out absolutely awful, even husband with eyeballs couldn't help then success with this recipe and no eyeballs around... I amazed them all. So don't know why this recipe works over other ones but for me it sure does. I only cook one at a time, and if cooking a large batch I will turn my oven on to warm which is about 175 degrees to keep them warm for serving the masses... *smile* If you try these let me know how they turn out and your timing etc. Dee
