I like your method, too. You don't have to turn it if you cover it with either a bacon crisper or a pan lid. Also, I like to make scrambled eggs in the bacon fat that's left in the pan.

Another way you can do it is put it on a cookie sheet in the oven on 350 for about 10 to 12 minutes, you never have to turn it, and it's the way I love it, crunchy and chewy at the same time. Once it's finished, put it on a plate with paper towels or napkins, and that will soke the grease right up for you.
