I forgot to mention that the sausage is in bulk, not in casings. It looks like, although I haven't weighed them, they're in about 8 ounce packages. I'm thinking that patties would be good.

I have had venison sausage cooked on a grill and it was rather dry. I like it better cooked in a frying pan with a little oil, bacon fat, or combination of both. Just turn them in the pan a few times to make sure they get cooked on all sides or put a cover on the pan and just check them every couple of minutes to make sure they aren't sticking to the pan. If the sausage is a little spicy, it can be used in Jambalaya-type dishes or Italian tomato sauces.

I rejoined this list yesterday. I have acquired a deer, processed into burger, sausage, steaks, and roasts, all separated, vacuum sealed, frozen and labeled. I've got about 90 pounds of venison in my freezer. So, with that in mind, I'm now asking for tips on grilling, barbecuing, and smoking venison. Firsthand experience in the form of tips and recipes from a blind person's perspective are preferred. Recipes and tips copied from browsing the Internet are least preferred, as more help can be gotten directly from blind people who have had the necessary experience. Thanks.
