If you take the meat off the grill and set the cheese on it it should melt
from burger heat pretty quickly. I've done this with cheddar in the past.

Have you considered taking it off the George and putting the meat with
cheese in the microwave for a few seconds?  I wouldn't think it should take
more than a few seconds, maybe 10 to 20.
