Abby, I'm by no means an experienced cook, but I've cooked both ground beef and ground turkey a few times. It is definitely difficult to get the meat cooked evenly all the time, but what works best for me is to keep breaking up the meat the whole time it's cooking. It takes time and you can't really do anything else at the same time, but it's the only way I've found to get it cooked evenly or at least close. The problem is that if you just let the meat cook after breaking it up it clumps together again. Hope this at least helps a little.
