Before anyone ever eats ribs, they need to try to pull the meat off the bone on one of them with the fingers. If it doesn't come off easily, those ribs are under-cooked and need to be sent back to the kitchen for a little more cooking. This test cannot be done safely with any kitchen utensil. The other thing you want to find when feeling ribs is some bark on them. Finally, eating from the bone with the hands is a completely different experience than with utensils on a taste level. Finger bowls can be set up in advance to take care of any mess.
