Avocados are actually pretty easy to deal with. The outer skin is very firm in comparison to the soft inside. I start by first washing and drying off my avocado before cutting into it.
The middle of the avocado has a fairly large round pit – like a little golf ball. Use a sharp knife to cut into it. I cut slices off of one at night for my salad and then store what’s left in a plastic bag in the fridge. When I take the first cut, I start up near the skinnier, tapered end. I’m basically cutting off thick disks of it. The first cut is more like a little cone in shape. Avocados have a high caloric value because they have a high healthy oil content in them, so I don’t eat an entire one in one sitting. It lasts a few days for me. Usually on the first cut through I can slice right through without hitting the pit. Then I cut that piece in half and sometimes can peal the skin off in one piece with my fingers. Other times the skin breaks off in smaller pieces and might require a knife or something to help scrape the soft inner flesh off of the skin. At the point I starting cutting around where the pit is, I still cut through the flesh, not the pit, and then can push it off the pit with my fingers. Usually comes away clean from the pit. You don’t want it to be mushy, but when its ripe you should be able to feel a little bit of give or softness to it. I love them cut up in my salad and guackomoli too!
