Hey Scott, In setting up my Imail long ago, I changed the "offical" host name to example.com and put the alias to mail.example.com.

Note that the domain that is used depends on IMail's whim -- it seems that if the E-mail is sent directly to a user, IMail will use the official name of the domain (not a domain alias), but if the E-mail is sent to an alias, IMail will use whatever domain that the sender used.
