I'm worried, though, that part of the stamping concept that I really
like might be lost. In the "traditional" UI, all the stamps are always
visible in a central location, so at a glance I can find out what
semantics I've associated with the current item.  With this accordion
rendering of stamps, the sense of what your stamping options are is
dramatically improved, but which stamps are chosen is harder to
coalesce.  On small screens some stamps may even be out of view.

I think this is a really good point.

I think it might be good to have a bunch of small icons for each stamp somewhere that is always viewable, either at the top of the detail view or somewhere else in the ui and clicking on one of those stamps would jump you to that stamp expansion in the detail view.

This sounds like a nice 0.8 feature tho. IMHO, in our current "let's get this out and done" state of mind I think losing the "all stamps are visible" feature is a good trade off for having better support for smaller window sizes. If we follow the old plan of record stamps become so painful that it's almost unusable at smaller window sizes, and I think that is a larger barrier to people understanding and using stamps than having them always visible.
