Perhaps a standard questionnaire for instructors to fill out after each workshop. Something that can be completed very quickly, but with room for comments if further discussion is needed. You might like to ask what version of the materials were used (in the vast majority of workshops I've organised we've used a customised fork of the materials, not the originals) and how long each of the components took (or how much was covered in x time and what was skipped).
