You can write in other languages in XCode, (C++ is what I would have leaned toward if I was going to use the Carbon APIs) but the Cocoa APIs and documentation are in Objective C, so it makes it easier to stick with Apple's standard. (It also will make future transitions easier as you stated.) I let my ADC membership lapse to peon status, but I can upgrade it once the project gets off the ground. There are a few perks that will come in handy like Apple's testing labs.
