Just like Eudora - click on the column heading. If you control-click 
on the column headings you get the change to add or delete columns 
that are displayed. Unlike Eudora, these changes are mailbox 
specific, not application wide.

You can't, although I have suggested this and it seemed to be

Again, just click on the column heading
