Do you have any schedules, tasks, rules that might account for this? If you're not sure, try disabling all of them and see if that helps. If it does, use a process of elimination to find the culprit.
Also, try dragging your Entourage preferences to the desktop (with Entourage quit); relaunch Entourage and see if that makes a difference. Trash the old preferences if it does. Try this with both com.microsoft.Entourage.prefs.plist and Entourage Preferences (both in Home/Library/Preferences/Microsoft). If these measures fail (and any others that might be suggested), try a full removal of Office using the Remove Office tool and then reinstall (again).
