I think you have to "look" at this from another point of view.
I ask you know: Have you ever realized what the DOF of your eye is? Oh yes. At
the very basics, your eye is a lens and it has a focal point, minimun focus
distance (augmenting with the age!) etc.
Your brains are always working to compensate for any alterations in your
environment. That's why you seldom really realize the color casts of the
tungsten
light while your slides come all yellowish.
In the case of DOF, *you* at the very moment are looking at the
location/object to be
taken. When you look through the viewfinder, your brain uses the information it
just had available to 'rebuild' the scene. Your eyes *are* seeing the shallow
depth but your brain makes it up for a more 'logical' version.
That's what I *think*. I have no specific training on the subject.
