    Ok, I got thinking about camera mode using the 380EX, and took out the
camera and flash to do some testing. Indoors, my camera was showing 1/60th
at F4 using P mode. That's a compromise to get ambient light high of course.
I'd need more aperture to ensure DOF, so...
    You need to use AV or M mode to be able to change your aperture/SS
settings. P mode chooses one for you, you can't change it.
    I found using Tv mode (shutter priority), since it defaults to 1/125th
shutter when turned on, your f stop will likely be maxed out wide open,
depending on the amount of light available.
    I believe you should be using Av, or aperture priority mode when you've
got the speedlight attached. Of course M mode works fine too, it just takes
more thinking.
    It's true the camera wants to expose for proper ambient lighting, you
can dial in exposure compensation to make the background darker. The flash
output will remain the same. I like having my background properly exposed,
but in some cases you might want it darker. In alot of cases actually you
won't have a choice because your shutter speed will go too low, especially
if you want to stop down a bit and your film speed isn't that high, and/or
you're in a very dark room.
