Yep, bring everything you can... you can leave them in the bag and you
don't generally have to carry the bag all the time. If you can get another
EOS body, that might save you at some point. And not just for backup,
maybe you can keep some very different film in the other body. Of course,
the hassle of changing the lenses will limit the use of that.

I think 70-200 2.8 is a great lens for shootimg in the church. But of
course, not the only one. You'll need some wideangle shots too. But the
70-200 will allow you to be out of the way also. The only problem is the
light... you never have enough of it. So you might still need fast film,
monopod or flash. Or some combinations of those. They all have downsides
too. Fast film -> not too large enlargements, monopod -> a hasle, can get
in the way specially if you haven't used one much before, flash -> you can
easily get good subjects in front of black background (the
"deer-in-the-headlights" -look), which doesn't quite reflect the mood in
the church. Maybe you need to get all these in the equation.

With 70-200 2.8, you could leave the 70-300 IS a bit further away. The 50
1.8 might give some nice available light photos, but the 28-135 IS seems
like a very good overall lens for shooting the wedding.
Good luck. (been there once... scary, busy, hard, harder than you think,
BUT definitely doable. Not as impossible as most people here would like
you to think it to be. Will do it partially again in a short time... but
this time not as the official photographer, there will be somebody else
sweatting :-) More like any other guest... with a monopod and large
camerabag ;-)
