What's the problem with M mode? You even have a selectable fixed 
shutter speed. I don't know much about E-TTL, but wih A-TTL in
AV Mode and with a fixed shutter speed, there is nothing left
to do for A-TTL, it should default to plain TTL then. And that's
what you get in M anyway.

Ah, I see. In this case some people might prefer to have AV outside,
to get an automatically adjusted shutter speed. Ok, M doesn't give 
you that, but is nevertheless very much preferable over AV IMHO.
AV will vary your exposure depending on your subject. OTOH, if
you thoroughly metered the lighting ONCE and the lighting isn't 
changing all the time, life is much easier with M mode. Meter once,
set your aperture and shutter speed and click away without worrying
about exposure anymore. Taking a meter reading and setting the values
can be done pretty fast and you have to plan ahead anyway in such a 
situation. There's no point in gambling when doing wedding pics,
at least if you are responsible for the official pics.

Isn't there even such a setting on some higher level EOS bodies?
I think on the 5 and 1N I can fix the shutter speed to the 
flash sync speed by setting a CF.
