I think you are batteling the quirks of automatic exposure, not the
equipment itself. Realize that your flash has limited coverage. So
unless you dial your exposure in to allow for some background detail,
the background will be black.
One way to deal with this could be to have a slave flash illuminating
the background. But this will take a lot of practice to get right and
I bet the background flash would be in the wrong spot during the
wedding anyway. But it could make for a cool shot.

They're pretty good. I used one on my previous camera system. It
definitely gets rid of the "deer in the headlights" look of a typical
on-camera flash picture. It's an overpriced plastic tub, though. But
such is life in the photo business. I would recommend that in addition
to the Omni Bounce you take a look at a flash softbox such as these
made by LumiQuest:

Beware that there is some light loss associated with the diffusers.
According to LumiQuest, their softboxes "eat" about one stop of light.
According to Sto-Fen's FAQ (http://www.stofen.com/FAQ/index.htm), the
flash coverage is reduced by a factor of 2.5 when the OmniBounce is
used. This corresponds to a light loss of 2.65 stops (#stops =
log(2.5)/log(sqrt(2)) = 2.65).

Are you expecting your digital shots to not be sharp? I sugest you
make a comparison between the two. Shoot with the film you intend to
shoot during the wedding. Shoot digital side by side. Compare the
results. I think you'd be surprised. And NO... I do NOT wish to
restart the digital vs film debacle! :-)
