I don't see why a CRT would be any different though in showing a circle as
round.

The 19" LCDs are made in the 5:4 aspect shape. All the CRT monitors I've known are in 4:3 shape. You need a resolution with the same ratios to get proper geometry, unless your LCD has non-square pixels (very uncommon for computer displays).

No, what you need are monitors with the same pixel dimensions (ie, pixels with the same heights and the same widths and as you mentioned, almost invariably square). I use a 12" Powerbook (1024x768) with a 19" LCD (1280x1024) side by side for an extended desktop for much of my architectural work. Both display circles as proper circles, because the 19" monitor has actual proportions of 4:5 and the Powerbook has actual proportions of 4:3. Both have square pixels.

With CRT's you can display non-square pixels quite easily, so there you will have to choose a resolution that doesn't screw thing up.

Now, 98% of people will not notice the difference if the resolution is misadjusted, as the distortion is on the order of 6% linearly. There are plently of people who don't notice the 33% difference between 4:3 video and 16:9 HD format if one is displayed as the other. The eye and brain can be wonderfully flexible...
