Why would they not be as simple with bike motors?
  There would no clutch to tune, no jets to monkey with, and if guessed wrong 
now, squeak!!!!
  There's no temperamental 2 stroke....
   Sorry, the only logic that follows is that it may be more simple because 
people are used to the shuffle, and afraid of the unknown....

If I wanted a car with a bike engine I would find a Formula Ford that needed 
an engine and gearbox and put a bike motor in it! That would lower the cost 
big time for driving a car like that.
But putting the bike engine in a F500 will bring out all the extra cost that 
everyone forgets they get started on the car of their dreams. Before I 
would put a ton of money into my 89 Zink I would take that hard earned money 
and find one of the newer cars like Jay's or from Q!

Also, there are places I have run in a Solo II (non SCCA events) were in the 
average F440/F500 you always want both hands on the wheel. In Solo II not 
shifting is the way to go in these cars! Every you shift you add fractions 
of second which is the difference between winning and loosing!
