In general, changes you make in a part will affect only that part, and will "unlink" that item from the score -- further changes made _to that item_ in the score will no longer affect that part. Similarly, most changes made in the score will affect all parts (except those where _that item_ has been unlinked _in that part_). However, there is often a "modifier" which can be used to override the default behavior, so that a change made in the part, for example, will also affect the score and will not unlink that item. (All of this refers mostly to positioning of things like expressions and articulations, beat chart adjustments, etc.)

Many things which affect pages (like the page size dialog) have a new dropdown menu which lets you indicate whether the change should apply only to the current score/part, all score/parts, or a selected group of score/parts.

Some things cannot be unlinked. Anything having to do with measure number regions (unfortunately for you) is one of them. This is another case where a 'parts score' would be useful. Similarly, if you are in the habit of changing text sizes of expressions for your parts, this is best done with a parts score.

If this all sounds a little confusing, it will become clearer when you have a chance to look at the demo (or the actual app).
