So, what I'd need from Finale is to insert these instruments/voices into it in score form, than replay the songs, rewrite if I am not satisfied, then replay again and if satisfied, record. If the rendition is half decent realistic, and away from the MIDI sound, I'll be very satisfied.

Your statement makes it sound as if all midi modules (software and hardware) sound the same, which is not true.

I've got a Kurzweil PC2r midi module which sounds as good as many of the sounds of the GPO that comes with Finale.
I've also heard hardware midi modules which sounded like crap.

GPO is still MIDI, just a different sound source, so you can't get away from MIDI without having live musicians.

As to your remark about the sounds you didn't like in Sibelius. We can't know what you might think about the sounds from Finale/GPO, so you'll need to listen to the demos and make your mind up.

I certainly wouldn't want you to buy an expensive program because I like the sounds -- you might hate them. That was my basic point in the remarks about the different artists on the violin and trumpet -- what one person loves another may hate.
