I would think that if somebody is using chord scale theory and doesn't know what key they're in, then they aren't doing it right. Chord scale theory is supposed to help you choose passing tones between chord tones and inform you as to which ones sound closest to the key, so you don't have to reinvent the wheel on every different chord.
I'm not sure I understand your point about wanting to avoid the Eb. All the aug6 chords (as understood in jazz) are slightly different voicings of the same chord using the same chord scale. I don't even think most jazz musicians would want to differentiate between them. But all this is just to clarify it in chord-scale terms. If you don't subscribe to the theory, that's fine; there's certainly more than one way to skin a standard. It's just a way of looking at available notes on a chord.
