I take your point about spelling, although in jazz just about anyone would 
write an Ab7(b5) with an D natural rather than an Ebb.
Your other point is precisely why I write b5 to avoid the Eb.
As a jazz player I'm no fan of chord scale theory - it has produce a bunch of 
players who seem to have no idea what key they're in while they twitter through 
some lovely standard.. ;-(
