Could I dream it is possible to run GNOME in a window the same time I have OSX Mac Window server running and be able to jump between the two?
If so there is probably a FAQ section I have missed so far.

You certainly can do such a thing via Fink: installing the 'bundle-gnome' and 'bundle-kde' or 'bundle-kde-ssl' packages will install everything you need to run GNOME or KDE, respectively.
