I do not agree in any way. It's just an assumption, a naming scheme. 
Things work the same when switching z with y, both in mathematics and 
physics.

I've learnt at school the right-hand rule (see 
http://en.wikipedia.org/wiki/Right_hand_rule) where x and y are used as 
horizzontal
coordintae system and z is the vertical axis heading up. There's nothing 
fancy in that.
