Have you installed Perian? Perian adds extra functionality to
Quicktime Player.
Also, there's an older version of VLC for G3 Macs with 10.4.11.
I don't think you'll be able to get smooth video playback on a 700MHz
G3. Believe it or not, you normally would get better playback in OS
9.2, but the ability of applications in OS 9 to play modern video
files is limited. In OS X there are some things you can do, for
instance you can use something like Speed Freak to dedicate all the
CPU power the video playback. Having a faster HD is also good, perhaps
a 7,200rpm in a Firewire enclosure? Still, I think you'll probably get
jerky playback at best. Perhaps Ubuntu would do better than OS X, I
don't know? I suspect the 700MHz G3 is just too slow for smooth
playback in almost any OS?
