Four factors: Quality of the codec implementation. Data compression. Video resolution. Frame-rate. IN my experience the codec implementation and the frame rate are the biggies.
As far as formats go, I've played high-bitrate MPEG4 and Divx just fine on a 800mhz G3, it's H.264 where it really struggles.
