I've worked in publishing for a while, so a comment here: 

Shooting film from a paste-up is the last resort only. Do your proofs that
way (scale the size to fit on your printer works). But you should give a
digital file to the printer, from which he will make film (or maybe direct
to plate). (Hard copy too, but only as a check, not as a source.) They
should be able to handle all the standard DTP formats (PageMaker, Quark
mostly), but might be able to use Word files (not recommended, take care
with text reflows, colour often has problems). Also include all the fonts
you've used on the disk (a CDR is ideal) you give him. If you have any
problem, printing to PDF is pretty safe, or even just select the correct
printer driver (ask the printer which he prefers) and give him a Postscript
output file. This should be cheaper and faster than a paper master, as
there's less work for the printer, and the result is noticeably better. Mac
is still preferred by output people, so platform isn't a problem. After
you've got a relationship going (you should always visit to shepherd the
first job through), you can just email/ftp the files.
