That screen actually covers up a whole lot of very complicated and occasionally useful text. You can boot into verbose mode by rebooting while holding Cmd-V and you will instead get a black screen and lots of white text. From there you might be able to 'give us a clue' by telling us what sorta stage it gets to.
FWIW I have a Sonnet G4/500 ZIF on my B&W and have had no ill effects from updating to 10.3.3.
Another thing I suppose i should ask is - are you using a SCSI or IDE boot drive?
I also am curious why a G3 B/W can't boot through the fire wire. What
controls this function? Is it a particular component or just the way it's
wired up?
It's a limitation of the firmware, as Marc said. You can use XPostFacto to boot from a FireWire drive on these machines but it relies on a fully working internal hard disk partition that *does not* have OS X on (it works with OS X partitions but I strongly advise against it as it may permanently stop OS X on that partition from booting) to act as a helper.
