Gerbils do not hibernate. They are active all year round, even when it
gets to minus 40 in their Mongolian homeland.

As to their fate, it would depend on how easy it was for them to feed
themselves and avoid predators in the local environment.

There are places in Europe where gerbils have survived for many years,
but even then, there is no guarantee that they will survive for more
than a few years.
