Could we perhaps let you cast to `SnowflakeDriver` which extends
`adbc.Driver` with `NewDatabaseWithOptions` or something? (Or if we think it
will be useful outside of Snowflake, add a `DriverExt` interface that does the
same thing?) We've already added extensions this way.
