Although I cannot comment on census records for Goa, having investigated the 
registration records of the Portuguese consulate in Zanzibar, the categories 
are very specific. So I got for instance in 1889, the exact number of cooks, 
tailors, carpenters, servants, cobblers, coachmen, waiters, and many other 
categories.
The Bombay census records are all online. You can access these easily. They are 
very informative about the types of occupations Goans engaged in Bombay, 
although Goans are at times listed as Goanese and at other times lumped with 
Native Christians, and/or Portuguese. Here too you will get specifics.
