Probably not the IP of your machine, but the IP of your gateway is
sent to whatever domain from which you are requesting data. (How is it
going to know to where to send the return data?) So yes, when you
request the Map API javascript script files from Google, your gateway
IP will be sent to Google.

Browser information is usually sent as well, although you can change
this with many browsers.

Cookie behaviour you can control with your browser (I don't think that
the Map API per se sets any cookies, but the rest of google piles them
in - google ads, blogs, gmail, etc).

If you don't want this information to leave the country then don't
access any domains that are resident outside your country and turn
cookies off in your browser; although you might find both of these
behaviours very restrictive!
