In that case, one solution is to use a proxy.
I set this up for a client in order to be able to serve the maps via
SSL.
However, this client had a Premier license, and we got confirmation
from their Google representative that it was OK to use the proxy, but
I don't know if it would be allowed with the free API.
If you did that, then Google would only see the IP of your proxy
server.
