The smaller rear sprocket, for people such as myself, removes the *perceived need* to
have a sixth gear. The reason some (not all) people want six gears is because top
gear seems too short. As you say, swapping the six- for the five- speed cluster is
not going to get past that problem on its own.
Some people might want six speeds for more "racer" shifting action and to keep up with
the Schmidts next door - to each their own!
There should be nil perciptible difference between the angles of the butterflies at
WOT, and that shouldn't change when the throttle is shut! Like you say, fuel flow is
not determined by vacuum with EFI so the angle of the butterflies at just off idle
shouldn't make much difference.
