Since moving to Panther (I think it was OK under Jaguar, but I may be
mistaken), it has happened quite a few times that on sending Word files
in attachment while using Apple Mail.app, the person at the other
(Windoze) end has not been able to open the document.

I have checked the various settings that are available in Mail.app (why
didn't Apple come up with a better name, iMail perhaps?) and I couldn't
find anything to solve the issue.

Three things to check immediately:

1. Are you certain that you are sending files that end in ".doc"? PCs are very stupid machines and don't know what to do with files that don't have the right extension.

2. Are you attempting to send multiple documents to AOL (l)users? Give up, and either send one (properly extension'd) file at a time, or ZIP the documents into one ZIP file before sending. AOL sux.

3. Panther's Mail introduced a checkbox called "Send Windows-Friendly Attachments" that you need to be using if you're not already. It's nothing short of a miracle.
