Personally, I just keep the OS on it's own partition. I have symlink'd (kinda link an Alias but better - it's a UNIX thing that OS X works with quite well) my Documents folder out of my user folder to another partition, and am considering doing so for my Pictures folder (ever expanding iPhoto Library - grrr!!!) also.
Chas - have you any idea how moving the Users folder to another partition effects FileVault? I use it on all 3 of my machines to keep evil folks out of my files that I do keep in the folder. If I could shunt the Users folder off the boot drive without effecting the FileVault encryption, it would be kinda useful.
